Harvest and vinification
Harvest starts about the end of August and the beginning of September. Light maceration, drawing off and fermentation at a controlled temperature of 20° C. Slow second fermentation.
It has a fresh acidity, light and fruity, silky when tasted, leaving a pleasantly clean aftertaste. It has an intense, bright ruby red in colour, with persistent bubbles. Violet flowers and black cherry on the nose; dry and zesty, ripe red fruit with hints of cherry on the palate.
